I recently updated aws uploader from a much older version and now when I upload 100+ large images, my work action “when uploader is finished uploading” triggers almost immediately. (it seems to trigger when it reads the file names?) but the upload still takes 5-10 minutes.

Thanks for reaching out.
I would recommend you to add a pause before next action (around 2000 ms) after the "when uploader is finished uploading” action.
So, this action is triggering, once all the files reached the plugin. And since your files are big and there are a lot of them, action is triggered before their uploading.
Unfortunately, it is related only to the fact you upload a lot of big files at once.
