I am building an on-demand automotive detailing app. It works be connecting independent detailers, (uber drivers), to clients for on demand or booked services. How hard would it be to modify the uber clone app to work this way? or is there a better template to start from??

This is one really tricky question , it all depends how much you’d want to customize the template and what are the customizations, so it could take from a few clicks to a few days or more.
The knowledge of the person who is customizing it should be taken into account, a more advanced bubble developer will do it faster than a beginner.
At the moment the template incorporates the core functionalities of the Uber ride sharing, but we always stride to implement new updates, functionalities for our products.
