Are the payments only processed by Stripe? Can I use another payment platform especially when Stripe is not available in my country? Is there a provision for that.

You can process payments not only with Stripe. Basically, you can use every payment gateway, available plugin, or API connection. Depending on the region and the price you are willing to pay for that, you are free to choose any payment system that better suits your needs.
