What if I had the user enter the topics themselves to enter vs picking from a list of drop down topics. To manually enter topics can be cumbersome.

Thanks for your question.
In the current plugin version, user is able to compose the question and just select the category of this question. The categories are needed just for filtering questions within one platform.
Please note that this template is fully customizable, so you can change almost any part of the design and functionality.
You can remove this dropdown and allow your users creating the question without category:

Yes, I have customized the template to my liking and have made many changes.
I want users to be able to follow the topics of questions like how you would follow people.
Regarding categories and topics, I was wondering how I can have the user create their own topics without choosing from a dropdown menu?

Please note that you can remove the dropdown and just use the text input, where users will enter the category.
After it, you need to save this information in the same way as a question:
So, actually, our team does not provide step-by-step guidance on features, which are not included in the default functionality of the template.
However, please note that in case you already have an example of the following the user in your application, you just need to set a similar flow with the Question type as a data source.
As an example, please find the workflow of the “Follow” event, which you can use and change in the way you need:
