Has anyone got any examples of their template design?
What can we change or add, like headers, categories, content pricing layout, etc
Are there any tutorial videos on this subject

Allow me to recommend you to check the template documentation, as well as the Demo Pages to see design and main features of the template.
From there you can fully customize your website, which means it is possible to change almost any design/functional part (solid Bubble skills are needed).
Note, that all mentioned elements of the template could be simply changed 
As for the examples from other users, unfortunately, we can’t provide you them.

Many of them, especially those that cover the no-code basic principles are free and will allow you to know more about Bubble platform functionality.
