I suppose that any step\parameter in your configuration was missed, and for this reason, provided workflow is not working on your side.
I just tested both of them repeatedly and they work properly, as adviced 
Please check repeatedly every step and let me know about the result.

Is there any way to get the First Name / Last Name? The data that gets returned from Apple contains the first & last name separately, but I assume this plugin combines the two.
Currently the only option is “User name” but I would like to be able to access “User first name” & “User last name”

Thanks for reaching out.
Currently, the plugin retrieves only the Full Name of the user, since it is not always possible to determine the First name and the Last name.
However, please find the screenshot with the possible workaround for your case:
You can use a regex expression in Bubble to extract specific data directly from a text string using the : extract with regex operator and is likely the way you will use it most often. However, it can also be quite handy to use within the : find and replace functionality to identify the text you want to replace rather than typing in a static value.

We are happy to announce that we significantly improved our Sign In with Apple Plugin for Bubble | Zeroqode 
You no longer need to set up complicated Backend Workflows! All you have to do is set up your Apple developer Console and use a redirect URL for the Sign In with Apple button. All this majorly reduced the plugin’s time load after receiving a platform response.
