Is it possible to use the workflows from this plugin through backend workflows? I’m essentially looking to batch out charges by a service provider to their customers on a weekly basis. I need to run this on the backend as a weekly automated workflow.

Theoretically, deferred actions can work through the Backend workflows if configured correctly. But we would strongly advise you to pay attention to the fact that Stripe already contains this functionality and you can set a schedule for payments in the dashboard. You can also use scheduling actions that are present in the Stripe plugin.
