There should be 3 blocks: Booking, Payment and “Session”
where the session is the agreed schedule voice/video Consultation
For the Session, ie whatsApp, Zoom or open source ie Jitsi

For the block “Sessions”, the plugins mentioned by you will be a great choice. You can add a separate page to the template and use the plugins there.
